Chocolate Peanut Butter Energy Bites

It’s funny, but it feels like Sam has always been a part of my life, even though he is only six. How does that work? I love being his mom, even more than I ever could have imagined. It motivates me like nothing else ever has. It’s fun to go special places with him but I love the simple, everyday moments together just as much. I love doing things with him. I love our silly inside jokes. I love Sam!
My little brown-eyed boy has become quite the kitchen helper. Since he’s always been a picky eater, I started including him in food prep as a ploy to get him interested in new tastes. It has worked! He is much more willing to go beyond his favourite peanut butter and jelly sandwiches now. After all, peanut butter isn’t just a spread — it’s an upgrade!
For instance, we just made these delicious energy bites. They’re a quick protein snack to grab and go, filled with all sorts of good ingredients: Kraft Chocolate Peanut Butter, honey, oats, nuts, raisins plus flax and chia seeds. A few months ago if you’d told me Sam would go for this, I wouldn’t have believed it. I think the upgrade of Kraft Chocolate Peanut Butter made him willing to try them. Who wouldn’t like chocolate peanut butter—two of the best taste companions in the whole world?
- 3 cups oats
- 1 cup Kraft Chocolate Peanut Butter
- ¼ cup honey
- ½ cup white chocolate chips
- ½ cup chopped pistachios
- ½ cup raisins
- 1 tablespoon flax seed
- 1 tablespoon chia seed
- Mix all ingredients with a mixer on medium speed until well combined.
- Roll dough into balls and chill for 1-2 hours before serving.
