This Taco Bell beefy Fritos burrito recipe is an absolutely heavenly combination of crunchy, cheesy, and salty. 

Bite into this amazing burrito, and the corn chips will tantalize your taste buds with a satisfying crunch before you even reach the flavorful beef.

Tangy cheese sauce adds dimension to the textures and flavors, while a bed of fluffy Mexican rice provides the perfect base for this dish.

You’ll need:

  • 3 cups of cooked Mexican rice (see Pro Tip)
  • 1 tablespoon of unsalted butter
  • ½ cup of chopped yellow onion
  • 1½ pounds of lean ground beef
  • ½ cup of water
  • 1-ounce packet of taco seasoning
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 15-ounce can of ready-to-use nacho cheese sauce (warmed according to can directions)
  • 1½ cups of Fritos original corn chips
  • 6 large flour tortillas (burrito size)

PRO TIP:

I used a 6.4-ounce box of Rice-a-Roni brand Mexican Rice cooked according to the box instructions. It yielded the three cups needed. Feel free to use whatever brand you choose. You want to make sure you have three cups.

Frito Burrito Substitutions And Additions

TORTILLAS: The large burrito-size flour tortillas work best to assemble the burritos for the recipe. However, you can adapt this recipe to use smaller, taco-sized flour tortillas.

If this change is made, you will need to reduce the amounts of each filling ingredient for the assembly. Also, it will yield more than six burritos if the smaller tortillas are used.

TOPPINGS: Feel free to add your favorite toppings to your Taco Bell burrito with Fritos according to your taste. Some great additions include sour cream, sliced black olives, shredded iceberg lettuce, or diced tomatoes. Any or all of these would be delicious.

If you add some or all of these toppings, you will want to reduce the amount of rice and ground beef in each tortilla so that you do not overstuff it, making it hard to close.

FRITOS: You can substitute the regular Fritos chips for the chili cheese or the hot fire spiced ones if you want to add extra flavor or heat to your Taco Bell Frito burritos.

BEANS: Add refried beans or black beans for extra protein and a more hearty burrito.

RICE: Instead of Mexican rice, you could use cilantro rice, lemon rice, or Spanish rice.

How To Make This Taco Bell Frito Burrito Recipe

Before assembling the burritos, you will need to prepare all the filling components. Cook the rice, onions, and ground beef on the stovetop. Add the seasonings and simmer until everything is thoroughly cooked.

Our directions below will give you step-by-step instructions on preparing the burrito fillings, followed by easy assembly directions. 

STEP ONE: Cook the Mexican rice according to the package directions. While the rice is cooking, you will prepare the ground beef and the other filling ingredients.

STEP TWO: In a large skillet, on medium-high heat, add the unsalted butter and chopped onions. Cook the onion for one to two minutes or until the onions are soft.

STEP THREE: Add the lean ground beef to the skillet and cook the beef for seven to eight minutes or until browned and cooked. Drain any excess fat from the skillet.

STEP FOUR: Turn the heat down to medium-low and add the water, the packet of taco seasoning, salt, and black pepper to the ground beef. Stir to coat all the ground beef with the seasonings.

Cook for another four to five minutes or until the liquids have reduced and the ground beef is completely coated in taco seasoning sauce. Remove from the heat.

STEP FIVE: To assemble each burrito, you will lay one large flour tortilla onto a plate. In the bottom third of the tortilla, add half a cup of prepared Mexican rice.

You will want to spread it into an even layer, but avoid going all the way to the edge. You will use the edges to fold up your burrito.

STEP SIX: Top the rice layer with half a cup of the seasoned beef, followed by one to two tablespoons of the warm nacho cheese sauce, then a handful of Fritos corn chips.

You will want to ensure you are not overfilling your flour tortilla, or folding up will be very difficult.

STEP SEVEN: Once you have added all your filling ingredients (including any of the optional ones suggested in the tips), you will fold the bottom portion of the tortilla up and over the filling ingredients.

STEP EIGHT: Next, fold both sides of the flour tortilla to meet the filling ingredients.

STEP NINE: While holding the folded-up sides of your tortilla, you will very gently roll the tortilla up, starting from the bottom and rolling towards the top until your filling is all enclosed into the large flour tortilla.

PRO TIP:

These Taco Bell Frito Burritos should be served immediately. As the burritos sit, the Frito corn chips will start to get soggy from the cheese sauce and meat.

IN THE FRIDGE: We don’t recommend saving leftover assembled burritos. You can prepare all the ingredients ahead of time to make assembly quick and easy.

I like to store my cooked Mexican rice and seasoned ground beef in separate lidded containers in the refrigerator up to 24 hours ahead. 

When I am ready to serve dinner, I will rewarm the rice and ground beef in the microwave for about 45 seconds to one minute. Then, assemble the burritos from step five.
