Substitutions and Additions

FLOUR: You can use all-purse flour instead of cake flour, but your cookies will not be as soft and fluffy as the classic Lofthouse cookies. 

FOOD COLORING: You can tint the frosting different colors depending on the special occasion or time of the year that you are making a batch of this soft sugar cookies recipe. Our recipe makes lovely spring-themed cookies, but the sky’s the limit.

How to Make This Sugar Cookies with Frosting Recipe

Making these Lofthouse spring cookies is a fun and easy activity for anyone with even the slightest bit of baking experience. The necessary ingredients are not complicated, with mostly pantry staples used to make the dough. 

Roll out the dough once it has chilled and cut it into shapes with a cookie cutter. The cookies must then be baked in a preheated oven until slightly golden around the edges. Once they have cooled, you can top them with the brightly colored frosting.

To make these classic cookies

STEP ONE: Whisk together the flour, baking soda, baking powder, and salt in a medium mixing bowl, and set dry ingredients aside.

STEP TWO: In the bowl of your electric mixer, cream your butter and granulated sugar until it’s fluffy. Mix in the sour cream, eggs, vanilla extract, and almond extract. 

STEP THREE: Stir in the flour mixture just until combined.

STEP FOUR: Divide the dough into two equal proportions. Wrap the dough in plastic wrap and refrigerate for 3 hours.

STEP FIVE: Preheat the oven to 350°F and line two sheet pans with a piece of parchment paper.

STEP SIX: Dust your counter with a little bit of flour and roll the sugar cookie dough to about ½ inch thick with a rolling pin. Using a 3-inch round cookie cutter, cut out the cookies from the dough. Transfer the cookies onto the sheet pan about 1 inch apart.

To make the Sugar Cookie Frosting

STEP ONE: Cream the butter in the bowl of your mixer until it’s light and fluffy. Slowly mix in the powdered sugar until all is combined.

STEP THREE: Stir in a few drops of the green food coloring.

PRO TIP:

You can adjust the color of the frosting depending on how many drops of food coloring you add. Start with one or two and tint it as light or dark as you’d like.
