Peeps Rice Krispie squares are such a fun and colorful treat to celebrate spring and the Easter bunny arriving in town. Everyone’s favorite marshmallow treats are made with a rainbow of peeps, creating pretty pastel layers that are perfect for Easter.

Peeps Rice Krispie Squares Ingredients

For this recipe, you’ll need:

  • 8 (1.38-ounce) PEEPS Rainbow pops (4 colors of peeps in each pop – pink, blue, green & yellow)
  • 2 cups of mini marshmallows, divided into four ½-cup portions
  • ¾ cup of salted butter, room temperature, divided into four 3-tablespoon portions
  • 2 teaspoons of vanilla extract, divided into four ½-teaspoon portions
  • 8 cups of Rice Krispies cereal, divided into four 2-cup portions

PRO TIP:

Make sure you are using fresh Peeps and mini marshmallows in this recipe. They melt so much easier and smoother. 

Substitutions And Additions

BUTTER: If you only keep unsalted butter in your house, then you can certainly use that for these Peeps Rice Krispie treats.

I would suggest adding a pinch (⅛ teaspoon) of salt to each of your marshmallow batches to cut through the sweetness of the peeps and mini marshmallows.

RICE KRISPIES: We tested this Easter Rice Krispie treats recipe using both the name-brand Rice Krispie cereal and the generic versions. 

The name-brand rice cereal was much lighter in color, and the generics were more of a tan color cereal. 

When using the name-brand cereal, the colors stand out much better. Both the name-brand and generic cereals tasted great, however, they just looked a little different from the final product.

PEEPS: I used the Peeps rainbow pops for this recipe because they had four different colors in each package.

You can most certainly use whatever color of the Peeps you want from whatever size packages of leftover Peeps you have from the holidays. 

I do recommend that you don’t use the Peeps that are dipped in chocolate or that have flavors added to them. 

If you do choose to use the flavored ones, then I suggest you use flavors that complement each other as they will be combined for this recipe. You will also want to coordinate your liquid food color choices accordingly.

SPRINKLES: If you have some cute holiday sprinkles, you can top the Peeps Rice Krispies treats while the marshmallow mixture is still warm before you chill and slice them.

How To Make This Peeps Rice Krispie Squares Recipe

For each color of these treats, you will make a batch of gooey Rice Krispie treats following our directions below. Once they chill and you slice into them, you will be rewarded with a fun rainbow of layers.

STEP ONE: Spray a 9×13-inch baking pan with baking spray and set aside. Prepare all your ingredients before you start making these Peeps Rice Krispie squares because you will need to work quickly with each Peeps color batch.

You will need 4 medium-sized microwave-safe mixing bowls for this recipe. If you only have one or two mixing bowls, then you will need to wash the bowls between mixing each colored batch of marshmallow Peeps. Remove the Peeps from their lollipop stick and sort them into colors.

STEP TWO: To a medium-sized microwave-safe bowl, add ½ cup of mini marshmallows, 3 tablespoons of butter, and all 8 green Peeps. Microwave on high for 45 seconds to 1 minute. Add ½ teaspoon vanilla extract and stir to completely combine all the ingredients into a smooth consistency.

OUR RECIPE DEVELOPER SAYS : You can add a few drops of liquid or gel food coloring if you would like to deepen the colors of your layers. I would start with 2 to 3 drops of food coloring, then work your way up to your desired color intensity.

STEP THREE: Fold in 2 cups of Rice Krispie cereal until all the cereal is coated in the colored marshmallow mixture.

STEP FOUR: Layer the green-colored marshmallow-coated Rice Krispie cereal mixture into the bottom of the prepared baking dish. Using your hands, gently press the mixture into an even layer.

PRO TIP: Wet your hands with warm water, or spray them lightly with cooking spray, to help keep the marshmallow mixture from sticking to your hands as you firmly press the mixture down in the dish.

STEP FIVE: Repeat steps 2 and 3 for the yellow-colored Peeps followed by the blue Peeps and pink Peeps, until you have 4 layers of Peeps-colored Rice Krispie cereal, layered one on top of the other.

Gently press down on the final layer to make sure that your Peeps Rice Krispie squares are tightly packed.

STEP SIX: Place the baking dish into the refrigerator for 30 minutes to allow the Peeps Rice Krispies to cool and set completely before slicing and serving them. 

How To Serve These Layered Peeps Rice Krispie Treats

Once your Peeps treats have set, it’s time to get creative. Elevate your Rice Krispie treat game with these serving ideas:

  • Classic squares: Cut the cooled Rice Krispie treats into squares for a simple and satisfying serving option.
  • Get creative with cookie cutters: Use cookie cutters to cut the treats into fun shapes that coordinate with the holiday or occasion. You can find Peeps-shaped cookie cutters for an extra festive touch.
  • Peep topping: Press whole Peeps on top of the cooled Rice Krispie treats before cutting them. This is a great way to add a pop of color and a delightful Peep surprise in every bite.

Serve These Easter Cookies With…

Don’t forget a glass of cold milk or a chocolate milkshake for a special treat.

A homemade hot chocolate or refreshing iced tea would also be great choices to wash your gooey squares down.

Storing This Easter Treat

While you can store Rice Krispie treats longer term, they really are best made fresh as the texture will change in the freezer.

ON THE COUNTER: These Peeps treats can be stored in an airtight container on the counter for up to a week. 

IN THE FRIDGE: You can store the Peep Rice Krispie treats in the refrigerator for longer, but they may start getting hard after a week to 10 days.

IN THE FREEZER: These cute confections can be frozen for up to 6 weeks, but you may find they are not quite as gooey once thawed.

Can I freeze these Easter treats with Peeps?

These Peeps marshmallow treats can be frozen for up to six weeks but may not be quite as gooey once thawed.

How do I stir the Rice Krispie treats without them getting stuck to my spoon?

Spraying your wooden spoon and even your hands with cooking spray will help avoid a big sticky mess of treats stuck to your spoon and hands.

Can I cut shapes out of this treat?

Using a cookie cutter to cut shapes in your Rice Krispie treats is a great idea! Spray them with baking spray so that they don’t end up with the mixture stuck to them. Easter eggs and bunnies would be two great shapes to start with.

  • Place the baking dish into the refrigerator for 30 minutes to allow the Peeps Rice Krispies to cool and set completely before slicing and serving them. 

Notes

  • Make sure you are using fresh Peeps and mini marshmallows in this recipe. They melt so much easier and smoother. 
  • You can add a few drops of liquid or gel food coloring if you would like to deepen the colors of your layers. I would start with 2 to 3 drops of food coloring, then work your way up to your desired color intensity.
  • Wet your hands with warm water, or spray them lightly with cooking spray, to help keep the marshmallow mixture from sticking to your hands as you firmly press the mixture down in the dish.
  • You can allow your Peeps Rice Krispies to cool, and set them on the counter instead of chilling them. However, I suggest you wait at least an hour or more before slicing them. They may be a bit stickier when cutting them if you skip the chill in the refrigerator.
