ONION: I love sweet onions in this beef soup recipe, but you could also use white or yellow onion.
POTATOES: Russet potatoes are a great option for this recipe because they are nice and starchy. You could also use red potatoes. Some people substitute the potatoes for rice, barley, or pasta such as elbow macaroni or egg noodles.

This was a great football Sunday dinner on a damp chilly night! I added a can of cannellini beans and only one potato. Also added 2 bay leaves, fresh basil, 1/2 green pepper and 1/2 yellow pepper, also great substitution is jarred marinara sauce vs tomato sauce. So much deliciousness!

I LOVE this recipe! Itโs delicious! I always make it in the crockpot. I love how versatile it is. Sometimes I add green chilies or Rotel for a kick. You canโt go wrong with this recipe. Itโs perfect for using up veggies that need ate soon. I added cauliflower this time. We like to put a little bit of shredded cheddar or Parmesan on top and serve with Hawaiian rolls or a crusty bread.

I tripled this recipe and made it with venison, since I live with all deer hunters, it was super delicious, I didnโt have any tomato sauce so I used tomato paste and believer or not pizza sauce, My husband could not stop eating it, even my grandchildren loved it, and they are picky eaters, thank you so much for this recipe
