Table of Contents
What could be more festive than sipping on strawberry champagne floats to celebrate a special occasion? This delightful creamy beverage is the perfect mixture of sweet and bubbly, creating an amazing flavor that will have your party guests raving.
Strawberry Champagne Floats Ingredients
This float is a delightful dessert where strawberries bring sweetness and a touch of tartness, while the ice cream adds a velvety texture and intense strawberry flavor.
The champagne provides a fizzy element, with hints of citrus and apple, while a simple syrup made with sugar and vanilla extract enhances the overall taste.
You’ll need:
- ¼ cup of granulated sugar
- 16 ounces of fresh strawberries, stems removed (plus additional berries to garnish your glass)
- ¼ teaspoon of vanilla extract
- ½ gallon of Breyers natural strawberry ice cream, slightly softened
- 1 (750 milliliters) bottle of Brut Champagne, chilled
PRO TIP:
Feel free to use your favorite bottle of champagne for this float; however, I do not recommend splurging on the super high-end varieties because you add it to ice cream. I do, though, suggest you get a variety you would enjoy sipping any other time.
Substitutions And Additions
STRAWBERRIES: If fresh strawberries are not in season, then frozen ones work just as well to make your puree.
Make sure to thaw your frozen berries before using them for the best results.
CHAMPAGNE: I would stick with a traditional Brut Champagne; however, you can substitute Rosé Brut or even a Prosecco or Cava sparkling wine.
They tend to be a little sweeter and not as dry and pair best with the strawberry puree and ice cream.
ICE CREAM: You could also opt for vanilla ice cream in this fruity drink recipe, or how about a scoop of strawberry ice cream and a scoop of vanilla ice cream?
How To Make This Strawberry Champagne Floats Recipe
The first part of making this tasty drink is to make the strawberry puree. Once that has cooled, we’ll show you how to mix up your cocktail.
STEP ONE: In a small saucepan, on medium-low heat, add the granulated sugar and strawberries.
STEP TWO: Using a fork or potato masher, mash the berries to release their juices.
Cook the berries for five minutes, stirring often to prevent them from bubbling up too much and burning.
STEP THREE: Turn off the heat and stir in the vanilla extract.
STEP FOUR: Pour your warm strawberry puree through a fine mesh strainer, holding over a bowl, to remove all the seeds.
STEP FIVE: Cover your bowl of seedless strawberry puree with a piece of plastic wrap and chill in the refrigerator for at least one hour or until completely cool.
STEP SIX: When ready to serve, place two tablespoons of the cooled strawberry puree into the bottom of a stemless champagne flute.
STEP SEVEN: Scoop two scoops of ice cream using a small (1.5 inch or 1½ tablespoon) cookie scoop on top of the strawberry puree in each champagne flute.
STEP EIGHT: Very slowly so the champagne doesn’t spill over, pour four ounces of champagne into each glass.
Garnish your glass with a fresh strawberry and a little extra drizzle of strawberry puree on top of the champagne.
PRO TIP:
You can most certainly do a 6-ounce pour but be very careful because all those bubbles can overflow your glass quickly if you are not careful. Just pour slowly, and you should be fine.
