Pumpkin Spice Latte Jello Shots Ingredients
You’ll need:
- ¼ cup of water
- 2 (0.25-ounce) packets of unflavored gelatin
- 1 cup of cold brew coffee, unflavored and unsweetened, medium/bold brew
- ¼ cup of whipped cream-flavored vodka
- ¼ cup of French vanilla-flavored coffee creamer
- 2 tablespoons of pumpkin pie spice flavor syrup (I used Torani brand)
- Garnish – Extra creamy squirt whipped topping, dry pumpkin pie spice blend & 3 green straws cut into small pieces

Substitutions And Additions
PUMPKIN SPICE SYRUP: The pumpkin spice flavor syrup can be found online or where you buy other coffee flavor syrups. This is the same way your favorite coffee shops flavor your hot lattes for pumpkin spice or other flavored lattes.
If it is not in your grocery stores or big box retailers year-round, it can easily be purchased on Amazon or other online retailers. I like to buy larger-sized bottles and use it to flavor my morning brewed coffee during the fall season.
VODKA: You can substitute the whipped cream vodka with vanilla vodka or unflavored vodka if you cannot find the whipped cream flavored at your local liquor store.
The vanilla or unflavored vodka adds a slightly stronger vodka flavor profile to your jello shots. The whipped cream-flavored vodka is sweeter and lends a milder alcohol flavor to your pumpkin spice latte jello shots.
COFFEE CREAMER: We used French vanilla-flavored coffee creamer for this delicious pumpkin spice jello shot recipe, but standard vanilla will work great too.
If you can find a pumpkin pie spice-flavored coffee creamer during the holiday season, then you can use that and omit the pumpkin spice-flavored coffee syrup. A caramel coffee creamer would work in this recipe, also.
How To Make This Pumpkin Spice Latte Jello Shots Recipe

I love to always keep the cold brewed coffee in my refrigerator for iced coffees. Your favorite brand will work; you will just want to make sure that it is unflavored and unsweetened.
If you do not want to buy the cold brew from the refrigerated section of your grocery store, you can just brew a large pot of coffee and reserve 1 cup. You will need to allow it to cool completely before using it.
Make sure your brewed coffee is unflavored as well. I like a medium or bold variety for this recipe.
STEP ONE: Place 9 jello shot cups (they must be at least 2 ounces in size) onto a rimmed tray or plate and set aside.
STEP TWO: In a small bowl, add the water, then sprinkle gelatin packets over the top surface of the water. Swirl the bowl to allow the gelatin to be absorbed by the water. Microwave on high for 20-30 seconds or until the gelatin has dissolved.
You may need to stir the hot gelatin mixture to make sure you have no lumps remaining. Set aside to cool slightly while assembling the remaining ingredients.
STEP THREE: In a 2-cup-sized spouted measuring cup, add the cold brew coffee, whipped cream flavored vodka, French vanilla coffee creamer, and pumpkin spice flavor syrup. Stir to combine.
STEP FOUR: Add the warm, dissolved, unflavored gelatin to the coffee mixture and stir well.
STEP FIVE: Slowly pour approximately 1½ ounces of the pumpkin spice latte mixture into each jello shot cup. You may want to add just a touch more than the 1½ ounces to each cup to make a nice full cup.
STEP SIX: Place the tray of pumpkin spice latte jello shots into the refrigerator for a minimum of 8 hours or up to overnight to allow the gelatin to fully set up.
STEP SEVEN: Once the pumpkin spice latte jello shots have set up, you can garnish each one with a squirt of the whipped topping, a light dusting of pumpkin pie spice, and a piece of green straw.
