Pumpkin French toast casserole gives Thanksgiving breakfast a centerpiece of its own: bread baked soft in spiced pumpkin custard, with a crisp brown sugar and pecan topping.
It tastes a little like starting the day with dessert. I assemble it the night before, so in the morning there’s just the streusel to add and one pan to bake for the family.

Read Before You Start
- The streusel goes on in the morning. Left in the custard overnight it dissolves into the top and the crunch is gone. Make it while the oven heats and scatter it over right before the pan goes in.
- The bread has to be dry. Fresh bread can’t take up the custard, and that’s how the middle ends up wet.
Start With Dry Bread
Day-old French bread is what I use. Challah and brioche also work. They all absorb the custard overnight, helping the casserole bake into a soft, set center. Bread that’s too moist to begin with can leave you with a wet middle.
I’d skip soft sandwich bread and Texas toast, which come out too wet in this recipe.
Measure the bread after you cube it: A loaf’s weight won’t reliably tell you how many cups it makes, because some loaves have a much more open crumb than others.
If your bread is fresh, spread the cubes on a sheet pan and dry them in a 300°F oven for 10 to 20 minutes, depending on the bread. They should feel firm on the outside without taking on color. Let them cool before adding the custard.
With day-old bread, I leave the cubes spread out on a sheet pan while I make the custard. That gives them a little more time to dry before everything goes into the dish.
Make This Ahead
The custard uses a whole can of pumpkin, with warm spice throughout. For convenience, once the bread and custard are in the pan, I refrigerate the casserole overnight. But you can leave it as little as three hours.


When you take the pan out of the refrigerator, the bread should be soft all the way through, with no custard pooling around it. If a few cubes on top still feel dry and firm, press them down into the custard and let the pan sit on the counter while the oven heats.
Add The Pecan Streusel In The Morning
I make the brown sugar pecan streusel while the oven heats, then scatter it over the casserole just before baking. That timing keeps the topping crisp. Added the night before, it absorbs moisture from the custard and becomes a soft layer across the top.
Allow about two hours from turning on the oven to serving, including the resting time. For breakfast at 10, I turn the oven on at 8. Most of the preparation is already done, but the casserole still needs time to bake through and rest before slicing.
Check The Center Before You Take It Out
The topping can brown before the middle finishes baking, especially around the edges where the pecans touch the dish. If the top has enough color before the center is set, I lay a piece of foil loosely over the dish for the rest of the bake.

I insert a knife and gently tip it to one side so I can see into the gap.


The middle should be soft, but set. It will have the texture of bread pudding, so don’t keep baking in search of a firm, toast-like center.
Give It The Full 30 Minutes Before Slicing
Once the custard is set, I take the pan out and leave it alone for 30 minutes before slicing. The casserole settles slightly as it cools, and that rest makes a difference on the plate.

I had Pam S., an independent recipe tester, make this recipe in September 2026. In Pam’s testing, the first slice cut at 15 minutes slumped. The slice cut at 30 minutes held its shape. Give it the full resting time so you can serve a square that holds together while staying soft inside.

I like something salty alongside the sweet pumpkin custard and pecan topping. Oven baked bacon lets you cook a whole pound on a sheet pan, and plain yogurt is an easy addition to the table.
Pumpkin French toast casserole is sweet enough to serve on its own, so I put maple syrup on the table and let everyone decide how much they want.
Overnight fruit salad can go into the fridge the evening before, along with the French toast. For a bigger breakfast, I add sausage breakfast casserole. It can be assembled ahead too, giving you a sweet dish and a savory one with most of the preparation finished before morning.

Pumpkin French Toast Casserole
Ingredients
- 3 cups whole milk
- 15 ounces pumpkin puree (425 grams)
- ¾ cup granulated sugar
- ½ cup light brown sugar, tightly packed
- 2 teaspoons pure vanilla extract
- 2 teaspoons pumpkin pie spice
- 6 large eggs, room temperature
- 14 to 15 ounces cubed French bread, day-old bread, about 15 cups cubed
Streusel Topping
- ½ cup cold cubed salted sweet cream butter
- ½ cup light brown sugar, tightly packed
- ½ cup all-purpose flour
- 1 teaspoon pumpkin pie spice
- 1 cup chopped pecans
- ½ cup maple syrup, optional drizzle
- Vanilla ice cream or thawed whipped topping, optional garnish
Instructions
- Add the milk, pumpkin puree, granulated sugar, brown sugar, vanilla, pumpkin spice, and eggs to a large mixing bowl. Whisk until combined, and no streaks of egg are visible.
- Generously spray a 9×13 baking dish with nonstick cooking spray. Spread the cubed French bread in the prepared baking dish.
- Pour the pumpkin mixture over the cubed bread. (You can use a fork or spoon to gently press the bread cubes down into the pumpkin mixture to ensure that the bread cubes soak up the mixture) Cover the baking dish and chill in the refrigerator for at least 3 hours.
- Just before you are ready to bake the casserole, preheat the oven to 350°F.
- To make the streusel topping, add the cold cubed butter, brown sugar, flour, and pumpkin pie spice to a food processor and pulse until the mixture resembles coarse sand. (If you do not have a food processor, you can use a pastry blender to combine the ingredients) Transfer the streusel ingredients to a medium-sized bowl. Stir in the chopped pecans.
- Remove the casserole from the refrigerator. Evenly sprinkle the streusel topping over the casserole.
- Bake for 55 to 60 minutes, checking from 55 minutes. The streusel should be golden and just beginning to color at the edges.
- Remove the casserole from the oven and drizzle the maple syrup over the casserole. The casserole will look high when it comes out of the oven and will settle as it cools.
- Allow the casserole to cool for 30 minutes before slicing.
Notes
- Make sure you buy pure pumpkin purée and not canned pumpkin pie filling at the grocery store.
- You can let the casserole chill in the refrigerator overnight, covered in plastic wrap or aluminum foil, before topping and baking the next morning.
- If the top is coloring faster than the center is setting, lay a piece of foil over the dish for the rest of the bake.
- From taking the casserole out of the refrigerator to serving takes about two hours: making the streusel and heating the oven, 55 to 60 minutes baking, and 30 minutes cooling.
- If you’d rather have whole slices than cubes, my baked French toast also soaks overnight and bakes in the morning.
