How to Make Cinnamon Roll Casserole
PRO TIP:
This is a great recipe to make the night before. Prepare everything in the casserole dish, cover it, and pop it in the fridge overnight. Throw it in the oven once you are ready to bake the next day.
STEP ONE: Preheat the oven to 375°F. Lightly spray an 11×7-inch baking dish with cooking spray.
STEP TWO: Cut the cinnamon rolls into quarters.
PRO TIP:
Use a pizza cutter or scissors to quickly and evenly cut the cinnamon rolls into pieces.
STEP THREE: Place the quartered cinnamon roll pieces in the bottom of the baking dish.
STEP FOUR: In a separate bowl, whisk the eggs, coffee creamer, vanilla extract, and allspice until well combined, and the eggs are light and frothy.
STEP FIVE: Pour mixture over the top of the cinnamon rolls.
Use a spoon to gently spread the mixture in the baking dish, ensuring that all of the cinnamon rolls are coated with the egg mixture.
STEP SIX: Place in the preheated oven and bake for 35 to 40 minutes, or until the casserole is completely set in the middle.
PRO TIP:
Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to check your casserole at the lower end of the recommended baking time.
STEP SEVEN: While the casserole is baking, in a separate medium bowl, add both of the cream cheese frosting packages from the tubes of cinnamon rolls.
Add the cream cheese and powdered sugar. Use a hand mixer to beat together until no lumps from the cream cheese remain.
PRO TIP:
Make sure your cream cheese is at room temperature to help avoid any lumps in the frosting.
STEP EIGHT: Once the cinnamon rolls are done baking, remove the warm casserole from the oven.
Let the casserole sit for two to three minutes, and then spoon the cream cheese frosting over the top of the casserole.
STEP NINE: Serve this sweet treat warm, and enjoy!

Cinnamon rolls are traditionally a breakfast or brunch food but can also be enjoyed for dessert any time of day.
Unopened cans of Pillsbury cinnamon rolls can easily be frozen. Just pop the container in the freezer and thaw it when you are ready to bake them.
If the cinnamon rolls have been removed from the container, they will keep in the fridge for up to two hours. After that, they will lose their leavening power.

Sticky buns are baked in a pan with nuts and sweeteners on the bottom. They’re flipped after baking, so the gooey bottom becomes the topping. Cinnamon rolls are baked and then have cream cheese frosting or an icing glaze added on top once they come out of the oven.

Did you change this recipe? I made it a couple of weeks ago from this Pin and it didn’t call for creamer. The recipe I used also called for maple syrup. Am I losing it or did you change it????
Layne Kangas says
We did update it recently! Enjoy 🙂
Juliane says
Hi, I accidentally grabbed reg size cinnamon rolls, does that matter?
Layne Kangas says
You might not need quite as much of the other ingredients then as the regular size will be smaller!
Natascha says
Do you refrigerate uncooked? Over night?
Layne Kangas says
Yes, that’s what I would do.
