Candy Dream Christmas Cookies

Cake is wonderful but good manners dictate a plate and fork. A table is optional, of course.
But cookies—that’s a different thing. Hand-held rounds of sweetness to be daintily nibbled or consumed with gusto and no one bats an eye if you take seconds or thirds? That’s for me!
And since cookies are meant to be baked by the dozens, that makes them perfect for holiday celebrations, Christmas parties and little boys with big eyes.
They’re also perfect for busy moms who try to do it all. Even though they’re little guys, mine know when I pull out the Christmas cookie jar, holiday fun is just ahead. The Country Crock® Make It Yours™ cookie recipe makes it easy to please.

This time I added peanut butter cups and chocolate candies in Christmas colors. Talk about divine decadence.
- 1 cup Country Crock®
- ¾ cup packed brown sugar
- ¾ cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ¾ teaspoon salt
- ¼ teaspoon baking soda
- 1 to 2 cups of your choice of mix-ins
- I added 20 mini peanut butter cups. I let the paddle break them up in the batter—another time saver. I also added one cup of regular sized green and red candies.
- Preheat oven to 375°
- Mix brown sugar, granulated sugar, Country Crock spread, egg, egg yolk and vanilla in a large bowl until well mixed.
- Stir in flour, baking powder, salt and baking soda until blended (dough will be soft and creamy).
- Add mix-ins.
- Drop dough by rounded tablespoons onto ungreased baking sheets 3-inches apart.
- Bake 10 to 12 minutes until edges are lightly golden.
- Cool 1 minute on wire rack; remove from baking sheets and cool completely.
