PREMADE CRUST: For a richer chocolatey twist, swap the graham cracker crust for a pre-made chocolate cookie crust, like the one in our Mississippi Mud Pie recipe.

If you prefer, you can also make your graham cracker crust from graham cracker crumbs, powdered sugar, and melted butter. Use a 9-inch pie plate for this recipe.

Make sure it’s completely cooled before adding your strawberry pie filling, and make it in a freezer-safe pie dish.

A crushed pretzel crust or nut crust would also be delicious with this recipe!

STRAWBERRY PRESERVES: We used Bonne Maman brand for this recipe. When choosing a brand of strawberry preserves, look for a brand that is a bright and vibrant strawberry red color. A higher-quality jar of preserves will give you the best flavor and make a noticeable difference in the flavor of your pie.

If you want to use fresh or frozen strawberries instead of preserves, go ahead! Chop them up fine and stir them together with a tablespoon of sugar. Let them sit for five to ten minutes, then mix them evenly into your pie filling.

GOLDEN OREOS: Not a fan of Golden Oreos? Classic graham crackers work beautifully in the crumb topping. Or, for a different, more chocolatey twist, use regular Oreo cookies instead.

VANILLA EXTRACT: Add one teaspoon of vanilla extract when you mix in the condensed milk for a soft vanilla flavor in the pie filling.

NUTS: For an extra crunch, add a quarter cup of chopped walnuts or pecans to the crumb topping mixture before baking.

EXTRACT: We used LorAnn Gourmet strawberry extract. It has a beautiful deep red color, adding a little extra pink to the pie filling.

Not all brands of strawberry extract will be colored. Some are clear, so if you want that pink hue, use an extract that’s red in color. Be sure to use a good quality brand of extract for your pie.

HOW TO MAKE THIS STRAWBERRY SHORTCAKE FREEZER PIE RECIPE

Making a frozen strawberry cream pie is about as simple as it gets. Ready to whip up this easy frozen treat?

Here’s a detailed breakdown of the steps to make this dreamy strawberry shortcake freezer pie.

STEP ONE: Gather and prepare the ingredients. Soften the cream cheese and thaw the whipped topping by allowing them to sit at room temperature for about 30 minutes. This will help them mix more smoothly into the filling. Preheat your oven and line a small sheet pan with parchment paper. Set it aside for now.

Don’t toss out the pie crust lid. You can use it as a domed lid for the finished pie. 

STEP TWO: Use a food processor to crush the Golden Oreo cookie crumbs. If you don’t have a food processor, place the cookies in a Ziploc bag and crush them with a rolling pin or gently pound them with a meat mallet until they’ve reached a crumbly texture.

STEP THREE: In a medium-sized mixing bowl, whisk together the melted butter and strawberry gelatin mix until they’re fully incorporated. 

STEP FOUR: Pour the mixture over the Golden Oreo crumbs and stir well until the crumbs are coated. If every crumb isn’t completely coated, it’s fine!

STEP FIVE: Spread the crumb topping mixture evenly over the parchment paper and set it in the oven to bake.

STEP SIX: Meanwhile, you can begin to make the creamy strawberry filling. Start by putting the room-temperature cream cheese into a large bowl. With your electric mixer on medium speed. beat the cream cheese until it’s light and fluffy.

You can also use a stand mixer fitted with the whisk attachment. Use a rubber spatula to scrape down the sides of the mixing bowl every 20-30 seconds.

STEP SEVEN: Pour in the sweetened condensed milk. Keep beating on medium speed until the mixture is smooth and the condensed milk is fully combined with the cream cheese. Make sure there are no lumps! Again, remember to keep scraping down the sides of the bowl.

Be careful not to overmix the filling, as this can cause it to lose its really beautiful, vibrant color.

STEP NINE: Very gently, fold the thawed whipped topping into the cream cheese and strawberry mixture using a large spatula.

STEP TEN: Pour the strawberry cream cheese filling into the graham cracker crust. Use the back of a rubber spatula to spread the filling into a smooth, even layer, ensuring it reaches right to the edges of the crust.

STEP TWELVE: Very carefully, place the entire pie in the freezer. Make sure it’s sitting on a flat surface. You may need to set it on a plate or small baking sheet.

Freeze for at least eight hours, but overnight is even better. Make sure the pie is completely frozen before cutting and serving.

Keep the pie in the freezer except when slicing and serving. This is a frozen dessert and needs to be kept frozen for best results.

  • 8 ounces frozen whipped topping thawed
  • 9- ounce 10-inch premade graham cracker pie crust

Instructions
 

  • Preheat the oven to 350°F. Line a 9×13 quarter sheet pan with parchment paper. Set aside.
  • To make the strawberry crunch topping, stir the unsalted butter and strawberry-flavored gelatin powder in a medium-sized mixing bowl until fully incorporated. Add the golden Oreo cookie crumbs and stir to coat the cookie crumbs with the strawberry-flavored butter. Note that you will not be able to fully coat all the cookie crumbs, and that is fine.
  • Spread the strawberry crunch mixture into an even layer onto the prepared sheet pan. Bake for 8 minutes, remove from the oven, and allow the strawberry crunch topping to cool completely.
  • In a large mixing bowl, beat the softened cream cheese, using an electric hand mixer on medium speed, for 1-2 minutes or until fluffy and smooth.
  • Add the sweetened condensed milk and beat again until the mixture is smooth.
  • Add the strawberry preserves and strawberry extract to the cream cheese mixture. Mix on low speed until the strawberries preserves are fully incorporated, and no white streaks remain from the cream cheese.
  • Fold the thawed whipped topping into the strawberry cream cheese mixture using a large rubber spatula until the pie filling is evenly mixed.
  • Transfer the strawberry shortcake pie filling to the premade graham cracker crust and spread it into an even layer.
  • Top the pie with the cooled strawberry crunch topping so that the top of the pie is completely covered.
  • Place the pie into the freezer for a minimum of 8 hours, but an overnight freeze is preferable for the best texture. Be sure that your strawberry shortcake freezer pie has frozen completely before slicing and serving.
