  • Preheat oven to 350* F. Lightly spray an 8×8 (approximately 2 quart sized) baking dish with nonstick baker’s spray. Set aside.
  • In a large mixing bowl whisk together the unsalted butter, granulated sugar and light brown sugar until well combined.
  • Add the eggs and whisk again until the eggs are fully incorporated.
  • Add the whole milk, fresh lemon juice and crushed pineapple. Whisk all the ingredients together until fully combined.
  • Add the cubed white butter bread and gently fold the bread cubes into the crushed pineapple mixture. Be sure not to break up the bread too much as you still want the bread to hold some of its shape while baked.
  • Transfer the scalloped pineapple mixture to the prepared baking dish and spread to an even layer.
  • Bake for 40-45 minutes or until lightly golden and the center is set. A knife inserted into the center should come out clean or with just a couple moist crumbs.
  • Allow the scalloped pineapple to rest for 5-10 minutes on the counter to allow it to set up slightly before scooping and serving.
