Comfort food doesn’t get more satisfying than this hamburger tater tot casserole! It’s hearty, cheesy, packed with flavor—and sneaks in some veggies, too. With a creamy beef and green bean filling under a blanket of crispy golden tots, this easy dinner is a family favorite for good reason.

I’ve made this for potlucks, random weeknights, and even as a make-ahead freezer meal — and there are rarely leftovers.

- 1 lb lean ground beef
- ½ cup finely sweet yellow onion
- 1 tablespoon minced garlic
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 cup whole milk
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- ½ teaspoon fresh cracked black pepper
- 2 cups freshly shredded mild cheddar cheese
- 2 cans cut green beans
- 1 package Tater Tots

Brown the beef: Cook ground beef with onion and garlic until browned and cooked through.
Make the filling: In a separate bowl, whisk together soup, sour cream, milk, and seasonings. Stir in part of the cheese and drained green beans.
Layer: Add the beef mixture to your baking dish, top with the creamy green bean mixture, sprinkle with more cheese, then layer on the tater tots.

Bake: Cook uncovered until the tots are golden and the filling is bubbling—about 45–50 minutes.

Hamburger Tater Tot Casserole
Ingredients
- 1 pounds lean ground beef
- ½ cup sweet yellow onion, finely chopped
- 1 tablespoon minced garlic
- 10.5 ounces cream of mushroom soup, undiluted
- 1 cup sour cream
- 1 cup whole milk
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- ½ teaspoon fresh cracked black pepper
- 2 cups mild cheddar cheese, freshly shredded (divided ½ cup and 1 ½ cups)
- 29 ounces cut green beans, drained (two 14.5-ounce cans)
- 32 ounces Tater Tots (I used Ore-Ida brand)
Instructions
- Preheat the oven to 375°F. Spray a 9×13 baking dish with nonstick cooking spray.
- In either a nonstick skillet or a 3-4 quart saucepan over medium-high heat, brown the ground beef, chopped onion, and minced garlic, stirring often. Continue cooking until the ground beef is cooked through and no longer pink. This should take about 5 to 7 minutes. Drain any excess oil from the beef.
- Layer the cooked ground beef mixture in the bottom of the sprayed baking dish.
- Next, in a medium-sized mixing bowl, whisk together the undiluted soup, sour cream, milk, kosher salt, onion powder, and black pepper until well incorporated.
- Stir in ½ cup of the shredded mild cheddar cheese and both cans of drained green beans until completely combined. Be careful when stirring to not crush the green beans.
- Spoon the soup mixture over the layer of ground beef.
- Sprinkle the remaining 1 ½ cups of shredded cheese over the soup layer.
- Finally, arrange the Tater Tots over the top of the cheese layer. Bake for 45 to 50 minutes until the tots are golden brown and the sauce is bubbling. Serve while hot.
Notes
- Frozen green beans can be substituted for the canned beans. You will need to add extra bake time for the frozen beans.
- Preshredded cheese can be substituted for freshly shredded cheese.
- Shredded colby jack, medium or sharp cheddar cheese can be substituted for the mild cheddar cheese.
