Doritos Cheesy Chicken Casserole Ingredients

Doritos Cheesy Chicken Casserole raw ingredients that are labeled

You’ll need:

  • 1 (9.25-ounce) bag nacho cheese Doritos chips, crushed (reserve 1½ cups for topping)
  • 1 (10.5-ounce) can cream of chicken soup, undiluted
  • 1 (10.5-ounce) can cream of mushroom soup, undiluted
  • 1 (8-ounce) container sour cream
  • 1 (15.25-ounce) can southwest corn, drained
  • 1 cup mild chunky salsa
  • 3 cups shredded cooked chicken breast
  • 4 cups fiesta blend shredded cheese (divided 3 cups and 1 cup)

PRO TIP:

For shredding a lot of cooked chicken at once, put the cooked chicken breasts in your stand mixer, and with the regular mixing paddle, start slow and then gradually increase speed to about medium, and it will shred the chicken for you.

SUBSTITUTIONS AND ADDITIONS

CORN: You can substitute the southwest corn for Mexicorn if you have it on hand.

SALSA: You can substitute the salsa for canned diced tomatoes with green chiles or Rotel tomatoes if you prefer. You can also use homemade salsa if you prefer. Check out our salsa recipe for a tasty option.

DORITOS: You can substitute the nacho cheese Dorito chips for any flavor of Doritos. What about Cool Ranch Doritos for an exciting flavor twist?

CHICKEN: If you don’t have time to make cooked chicken specifically for this Doritos chicken casserole, you can pick up a cooked chicken at the grocery store and use the rotisserie chicken meat instead.

CHEESE: The best choice for this cheesy chicken Dorito casserole is a Fiesta or Mexican cheese blend, but you could also opt for cheddar cheese.

I would serve this casserole with a quick pickle (either red onions or radish), and a green salad and hot corn bread with jalepinos to round out this menu.

Iโ€™m always looking for recipes that my granddaughter rates as โ€œI want this for my birthday dinner!โ€ That translates to โญ๏ธโญ๏ธโญ๏ธโญ๏ธโญ๏ธ! Next time I think I will try adding a can of green chilies for a touch of heat. Saw in the suggestions about using Cool Ranch Doritosโ€ฆthat is something else I will be trying!

    Absolutely loved this recipe.
First time cooked as directed. However, being in Australia, we could not get the corn mix, so I used a can of corn kernels and cut up a capsicum to go with it.

The second time I cooked it, I added diced onion and served with sour cream on top and the left over Doritos.
