- 1 pound of lean ground beef
- Half of a yellow onion diced
- 1 teaspoon of minced garlic
- 1 (12-ounce) bag of frozen corn
- 1 packet of taco seasoning
- 1 (14.5-ounce) can of petite diced tomatoes with green chiles, NOT drained
- 1 cup of sour cream
- 3 cups of Mexican cheese blend
- Sliced green onions, diced tomatoes, shredded lettuce, avocado, and sour cream for garnish (optional)

Doritos add a delicious crunch to many Mexican-inspired dishes. They can be crushed and added right into the casserole mixture or sprinkled on top along with cheese to finish off the casserole.

Dorito Casserole Substitutions and Alterations
BLACK BEANS: Want to add another layer of flavor to this ground beef Doritos casserole? Black beans are a great addition to this recipe. Add one cup of canned black beans alongside the corn and tomatoes.
GROUND MEAT: Ground turkey, ground pork, or ground chicken would all work well in this hearty casserole as a substitute for ground beef.
CHEESE: Use cheddar cheese, pepper Jack cheese, or Monterey Jack cheese as alternatives to the Mexican cheese blend.
DORITOS: Add a flavor twist by switching out the cheesy Doritos for cool ranch Doritos if you have those on hand.

How to Make Dorito Casserole
STEP ONE: Preheat the oven to 350°F.
STEP TWO: Spray a 9×13-inch dish with nonstick spray.
STEP THREE: Gently crush the chips, and set them aside. Two cups should be crushed fine, more like bread crumbs, and one cup should be larger chunks, to be spread on top at the end.

STEP FOUR: In a large skillet, cook the ground beef and onions. Drain any extra grease.

For an even quicker cooking time, the ground beef and onions can be cooked ahead of time. Store in the refrigerator for up to 3 days or in the freezer for up to a month.
STEP FIVE: Add the garlic to the ground beef mixture and cook for one minute.
STEP SIX: Add the frozen corn, taco seasoning, tomatoes with chiles, and two cups of finely crushed chips.
STEP SEVEN: Remove from the heat. Stir in the sour cream and two cups of cheese.
STEP EIGHT: Pour into the greased casserole dish and place it in the oven. Bake in the preheated oven for 5 minutes, until warmed through.
STEP NINE: Add one cup of cheese on top, then one cup of loosely crushed Doritos, and bake another five minutes until the cheese is melted.
STEP TEN: Remove from the oven and serve.
How to Serve Doritos Casserole
Serve with your favorite taco toppings, including diced tomatoes, shredded lettuce, guacamole, salsa, and sour cream.

I love the taco seasoned ground beef in this, a perfect pairing. Sour cream and tomatoes would be a perfect topper. Next time to try and add some more veggies into the mix, adding some bell pepper into it would be great or as the topper on a bed of lettuce for a deluxe taco salad!

Sounds great. I most certainly will make this. I usually use ground turkey in place of beef. With the seasonings it’s hard to tell the difference. I always add black beans to anything with a Mexican flavor and I add mushrooms to almost everything. That’s how I will make this casserole.

As for toppings I would add a small amount of sour cream topped with a very small amount of lettuce, tomatoes, and cheddar cheese. I would substitute the Mexican cheese blend for cheddar. I would not add black beans (I am not a fan of black beans) but I would probably have some on the side if someone wanted them.
