This fresh, delicious, homemade berry upside down cake is the perfect way to say I love you!

Simple, moist and tasty this easy, homemade berry upside down cake is a quick, old fashioned dessert you can make from scratch for your family. 

Fresh mixed berries are layered with cake for a classic recipe that will have your guests declaring it the best with it’s award-winning, gourmet flavor. 

This Southern, traditional favorite upside-down cake recipe can also be served in a variety of ways. I’ve baked cute little mini cakes to serve as individual portions before that were a big hit. You could also bake it in a cast iron skillet or a bundt cake pan. 

The sugar caramelizes for a yummy glaze on the berries that will have you licking your lips. You can also experiment with topping ideas. Fresh whipped cream would be delicious. I have a friend who sprinkled coconut on her berry upside down cake as well.

What is a Berry Upside Down Cake?

Much like it’s cousin pineapple upside down cake, the berry upside down cake features a glaze with berries on the bottom of the pan with the cake on top when baking. Before serving, you flip over so the berries are on the top of the cake. It’s so moist and tasty!

I always think of it as a Southern classic because it’s something my Southern Nannie makes. It’s an easy, homemade dessert everyone will enjoy.

This traditional dessert can also be made with a huge variety of fresh fruit: rhubarb, pear, cranberry, strawberry, blueberry, mango, plum, pumpkin, banana, peach, apple or apricot.

Today we will be using fresh raspberries and blackberries. Mixed berry is always a great choice! This upside-down cake recipe is such a hit with my family, I know I’ll be trying other fruits with it soon.

Ingredients for Berry Upside Down Cake

For today’s simple, old fashioned upside down cake recipe, we’ll be using the following:

  • 2 Tbsp. PLUS ¼ cup Brummel&Brown Organic Buttery Spread
  • 1/3 cup firmly packed light brown sugar
  • 2 cups fresh raspberries
  • 1 cup blackberries
  • 1 1/3 cups all-purpose flour
  • 2 tsp. baking powder
  • 2/3 cup sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tsp. grated lemon peel 2/3 cup milk

How to Make a Berry Upside Down Cake

Preheat oven to 350°.

Coat 9-inch round cake pan with non-stick cooking spray.

Melt 2 Tbsp. Brummel & BrownTM Original Buttery Spread and combine with brown sugar in small bowl. Pour mixture over bottom of prepared pan and pat into an even layer.

Ingredients for Berry Upside Down Cake

Evenly top with berries; set aside.

Combine flour with baking powder in medium bowl; set aside.

Beat sugar with remaining Spread in a large bowl with electric mixer until creamy. Beat in egg. Alternately beat in flour mixture and milk until blended. Pour over berries.

Bake 40 to 45 minutes until a toothpick inserted in center comes out clean.

Cool 5 minutes on wire rack; invert onto serving plate. Serve warm or at room temperature and dust with confectioners’ sugar if desired.

You could also make mini, individual serving sizes of this from scratch dessert which are always fun.

You could also use a cast iron skillet to bake in or even make it in bundt cake pan. There are lots of possibilities!

It’s divine by itself, but there are lots of tasty topping ideas as well. Fresh whipped cream with a little mint is a great idea.

A little powdered sugar would be amazing as well.

Chocolate or caramel drizzle would also be delicious.

You could also sprinkle the cake with coconut before serving.
