Substitutions And Additions
RICE: Jasmine rice would work best for this great recipe; however, I have used basmati rice, and it was delicious.
Any type of white rice would work great, or you could also use brown rice if you prefer.
SEASONING: For additional flavor, try adding a little bit of Italian seasoning and/or basil to this delicious chicken recipe.
CHICKEN: If you prefer dark meat, you could use boneless skinless chicken thighs in this comforting meal instead.
How To Make Chicken and Rice
PRO TIP:
If you are using leftover chicken instead of raw, you can skip to Step Five.
STEP ONE: Place a heavy soup pot or Dutch oven on the stove and turn to medium heat.
STEP TWO: Add the olive oil and butter to the pot.
STEP THREE: Once the butter is melted, add the grated carrots, diced onion, minced garlic, and 1 teaspoon salt.
Sauté until tender, about 10 minutes, stirring occasionally.
STEP FOUR: Add chicken pieces to the pot. Sprinkle with 1 teaspoon of salt and ½ teaspoon of pepper.
Stir occasionally so that the chicken browns on all sides, about 8 to 10 minutes.
STEP FIVE: Turn the heat to high and add 1 cup of white wine.
Cook until most of the wine has evaporated, stirring occasionally.
STEP SIX: Add the hot chicken broth. Stir in the rice. Bring to a boil, cover the pot and reduce the heat to low until the rice is fully cooked, about 15 to 20 minutes.
STEP SEVEN: Turn off the heat. Add in your chopped parsley and ½ cup of parmesan cheese.
Keep covered to remain warm if you are not serving it right away.

I make chicken and rice frequently in our house. I decided I wanted to change it up. I found this recipeโฆโฆ My 10yr grandson, after every bite, informed me of how good it was and it was the best ever! It is a very easy recipe and I cooked mine in the instant pot. Cooked everything as instructed except for the rice. When I got to that step I turned my rice function on. It came out perfect and really was very good. Keeping this recipe!!
