We are big lovers of Mexican cuisine at our house. Taco Tuesday is a must every week. 

If you can relate – or you’re looking for a fun new recipe to try – you’re going to love the rolled tacos we’re talking about today. 

They’re perfect for a hearty family meal or to serve for a party, especially during tournament time this March.

Rolled tacos are full of flavor, are easy to make and eat, and will satisfy anyone you serve them to. 

With lots of filling options, there is the perfect flavor for everyone. The crowd will go wild!

What is a Rolled Taco?

It’s a rolled-up tortilla filled with beef, shredded chicken or cheese. It’s then fried or baked and served with toppings like sour cream, salsa, and guacamole. 

My boys think they’re so fun to eat — and mama loves how easy they are to make. 

The possibilities for fillings is vast and you can easily make a big batch so there is plenty for everyone in your crew. 

I make them ahead of time, pop them in the oven and serve with sour cream, salsa, guacamole, and cheese dip for game day parties. 

Rolled Tacos Ingredients

Ingredients for Rolled Tacos

  • 3 cups shredded chicken
  • 1 can RO*TEL Tomatoes
  • 2 cans Rosarita Traditional Refried Beans
  • 3 cups shredded cheddar cheese
  • 30 flour tortillas (fajita size)
  • toothpicks
  • 2 tablespoons canola oil

Today, we’re going to be using shredded chicken for our filling.

I made my chicken ahead of time using my Instant Pot. You could also use a rotisserie chicken if you’d prefer.

If you’d like to make the chicken in your Instant Pot, here’s how: 

Place 3 large chicken breasts into the bottom of your Instant Pot. If they are large, slice them in half lengthwise. 

Add 1 ½ cups chicken broth, 1 teaspoon garlic powder, 1 teaspoon onion powder 1 ½ teaspoon salt and ½ teaspoon pepper. 

Place the lid on and set the top to “sealing”. 

Press manual and adjust the time to 25 minutes. 

When the timer goes off, release the pressure quickly by turning the knob on top to venting. 

Once the steam has released, remove the lid and remove the chicken and shred.  Then continue with making your rolled tacos!

My latest obsession is taking advantage of Walmart’s Grocery Pick Up. You can order everything you need, schedule your pick up time, then just drive up and have your car loaded at your designated time. 

It’s the perfect way to make good use of your time and eliminate stress. 

This week’s grocery order included all the fixings for these rolled tacos including lots of cheese, RO*TEL Tomatoes and Rosarita Traditional Refried Beans.

How to Make Rolled Tacos

How to Make Rolled Tacos

In a medium bowl, mix together the shredded chicken and RO*TEL Tomatoes.

Then, in a microwave safe bowl, add the Rosarita Traditional Refried Beans and microwave for 1 minute.

How to Make Rolled Tacos with Shredded Chicken

On each tortilla, spread a tablespoon of Rosarita Traditional Refried Beans down the middle, and top with 1 tablespoonsons of the shredded chicken/RO*TEL Tomatoes mixture and 1 tablespoon of cheese.

Easy Rolled Tacos

Roll the tortilla and secure with a toothpick.

Place the rolled tacos on a large baking sheet lined with parchment paper. Brush each one with a little bit of canola oil.

Bake at 425 degrees for 10-12 minutes until golden brown.  Remove from oven and let cool slightly before serving.

What to Serve with Rolled Tacos

When it comes to game day, it’s all about easy snacking, right?

I have dishes of sour cream, guacamole, and various salsas ready to go for guests to add to their plates for easy dipping with their rolled tacos.

Can You Fry Rolled Tacos?

Yes, you can! 

In a large baking pan or pot, pour 1 inch of oil. 

Preheat to 350 degrees and fry the tacos for 2-3 minutes until golden brown. 

If you’re planning on entertaining, it may be better to bake them so your guests don’t have greasy fingers — or have a house that smells like fried food. 

They also take less time to bake since you can cook so many more at a time in the oven.

Can You Use Corn Tortillas for Rolled Tacos?

You can use corn tortillas but these would work better being fried than baked. 

Can You Freeze Rolled Tacos? 

You sure can. You could assemble ahead of time and then store in a freezer safe container. 

I would suggest wrapping each taco individually and then popping into a freezer safe container or freezer safe bag before sealing tight. 

When you’re ready to bake, just take out the amount you want and bake.
