Even though I live in Arizona and we don’t get snow in the desert, I love the end of winter. Spring signals new beginnings and I love that idea and reminder in my life.

This week, the boys and I made our weekly pilgrimage to Target. If I’m honest, it’s more like a twice a week pilgrimage… but we won’t get hung up on the details.

I love putzing up and down the aisles there. I can always find so many treasures that I really and truly need. Really and truly, I promise. Sometimes I find items that I didn’t even know were available!

One of the things on my list for this trip included new shoes for the boys. They’re growing like weeds and sometimes it can be hard to keep up. Can you relate?

While we were shopping, I swung by the groceries as well. They had an abundance of beautiful, fresh, red strawberries and I just had to grab some. I knew the boys and I could spend some time in the kitchen together this week and make something incredibly delicious.

Incredibly delicious is right: this strawberry cream cheese pie will have you entire family smacking your lips and asking for more. From the flaky crust to the cream cheese base to the fresh strawberries and glaze — it’s the BEST recipe and oh-so-easy.

Strawberries to Make Strawberry Cream Cheese Pie

You might want to curl up in the pantry with the entire dish of this old fashioned dessert and keep it all to yourself it’s so good. The cheesecake layer in the bottom will have you drooling. Seriously.

To make it, you’ll need cream cheese, powdered sugar, vanilla extract, heavy cream, strawberry jelly, lemon juice, sugar, water and fresh strawberries.

You can choose to make a pie crust from scratch or grab a refrigerated pie crust.

Steps for Making Strawberry Pie

Bringing this yummy recipe together is so simple. You’ll start with the crust — either make it from scratch, or use a refrigerated dough like I did.

Roll out the pie crust and press into a deep dish pie pan. Use a fork to poke holes on the bottom and sides of the crust. Then you’ll bake the crust at 450 degrees for 7-9 minutes. Remove from the oven and cool.

While that’s happening, you can grab a medium mixing bowl and whip the cream until stiff peaks form. Add cream cheese, vanilla and sugar then whip until smooth and fluffy. (Whip it real good). 😉

Next, in a saucepan, add the strawberry jelly, lemon juice, sugar and water and bring to a slow simmer and keep stirring until everything is combined. You can then remove from the heat and cool.

Once the pie crust is cooled, fill it with the cream cheese filling and then top with the whole, hulled strawberries. After the glaze is cooled room temperature, coat the strawberries with the glaze.

You’ll want to chill for 30 minutes to one hour in the fridge before serving. And then… bon appétit!

Looking for alternative ways to make this? Instead of a traditional pie crust, you could also use a graham cracker crust. Other options would be topping it with dark or white chocolate shavings or a chocolate drizzle.

You could top with a dollop of fresh, whipped cream. Really… I don’t think you can go wrong when fresh strawberries and cream cheese are involved.

  • 8 ounces cream cheese
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 refrigerated pie crust
  • ½ cup strawberry jelly
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar
  • ¼ cup water
  • 2-16 ounce containers of strawberries hulled


  • Roll out pie crust and press into a deep dish pie pan. Use a fork to poke holes on the bottom and sides of the crust. Bake at 450 for 7-9 minutes. Remove from oven and cool.
  • In a medium bowl, whip cream until stiff peaks form. Add cream cheese, vanilla and sugar and whip until smooth and fluffy.
  • In a saucepan, add strawberry jelly, lemon juice, sugar and water and bring to a slow simmer, stirring until everything is combined. Remove from heat and cool.
  • Once crust has cooled, fill with cream cheese filling and top with whole strawberries. After the glaze is cooled to room temperature, coat the strawberries with glaze.
  • Chill for 30 minutes to 1 hour before serving.
