  • 1 ½ tablespoons prepared pizza sauce
  • 2 ½ tablespoons shredded mozzarella cheese
  • Pinch approximately 1/16 teaspoon dried Italian seasoning
  • 6-8 mini pepperoni slices

Instructions
 

  • In a 12 ounce, microwave safe, mug add the all-purpose flour, salt, baking soda and baking powder. Stir to combine.
  • To the dry ingredients add the water and olive oil and whisk until no dry pockets of flour remains. A fork or mini whisk work best for this. Smooth the dough batter into an even layer.
  • Top with the pizza sauce, being sure to smooth it out to cover the dough, then the shredded mozzarella cheese and dried Italian seasoning.
  • Microwave on high for 1 minute 15 seconds. Remove the mug from the microwave and top the melted cheese with the mini pepperoni slices. Microwave again for an additional 15 seconds.
  • Remove the pizza in a mug from the microwave and allow it to cool for a minute or so before eating as it will be very hot.

Notes

  • You can substitute self-rising flour for the all-purpose flour. You will need to omit the added baking powder, baking soda and salt as the self-rising flour already has added salt and leaveners in it.
  • Be sure that you are not using too small of a mug for this recipe or it will overflow from the mug as it is rising in the microwave. The microwave cooking will cause the crust to expand quite a bit but then once the microwave stops, the dough will settle into the mug.
  • If you can not find the mini pepperoni slices, you can cut regular pepperoni slices into smaller pieces to fit in the mug and be easily spread out on the top of the melted cheese.
  • You can add the pepperoni slices before microwaving the pizza, but I find that they tend to get covered up by the bubbling cheese as it cooks and the presentation is not quite as nice. Whichever method you choose, it will taste the same. If adding the pepperoni after the dried herbs, then just microwave the pizza in a mug for a full 1 minute 30 seconds.
