One of my goals for this year is to have more family meals at the table. During the busy sports season, we got used to eating on the run and in shifts. I’ve missed our nightly chats around the dinner table where we recap our days with each other.
It’s something that I remember from my own childhood: my mom would ask us about our days and what we were thankful for. It’s something I’ve incorporated with my own kiddos — and it’s time to get back to that!

Ingredients for Homemade Lasagna
This easy, homemade recipe is so simple to make from scratch and offers the big, traditional Italian flavors we all love.
Let’s gather the ingredients you need to cook the best homemade lasagna!
We’ll be using a pound of lean ground turkey and half a pound of Italian sausage. I used turkey sausage for my recipe. You could also use ground beef.
Also a small onion, baby bella mushrooms, marinara sauce, spinach, egg, Parmesan cheese, Horizon Shredded Mozzarella, Horizon Cottage Cheese and oven ready lasagna noodles.
You could also use a homemade tomato sauce recipe if you prefer.
I know there is some debate about making easy homemade lasagna with cottage cheese or with ricotta.
I grew up eating with it made with meat and with cottage cheese… so that’s what I often crave. Either way, I don’t think you can go wrong with sauce and pasta!

How to Make Homemade Lasagna
In a skillet, saute onions for 1-2 minutes then add in mushrooms. Cook for another 1-2 minutes.
Remove sausage from casings and add into the pan along with the ground turkey.
Cook for 5-7 minutes until the turkey is fully cooked. Spread about half cup of pasta sauce in the bottom of a 9×13 baking dish then pour the rest into the meat.
In a separate bowl, mix together the spinach, cottage cheese, egg, parmesan and one cup of mozzarella.
Add a layer of lasagna noodles on top of the sauce in the baking dish. Layer with 1/3 of the meat mixture, then top with the cottage cheese mixture. Place another layer of lasagna noodles on top and continue layering.
Spread the remaining cheese, about 3 cups, over the top of the lasagna. Cover and bake at 375 for 35 minutes. Then uncover and cook for another 15-20 or until golden brown. Garnish with fresh parsley.
How to Freeze Homemade Lasagna
Not only is this the best homemade lasagna recipe, you can freeze it for a quick meal later.
I suggest using a disposable foil pan if you’re going to freeze because it just makes it easier in my opinion.
You can also line a glass or metal 9×13 pan with aluminum foil, being sure to allow several inches of foil to hang over the edges. Wrap the extra foil over the top of the lasagna and stick in the freezer. When the lasagna is frozen, you can just lift out the foil and you’ll be able to use your regular pan for something else.
To start, very lightly grease the bottom and sides of your container/foil.
Then assemble your lasagna as specified in the recipe.
If you’re using a disposable foil pan, I suggest setting it on a cookie sheet before putting in the freezer so it doesn’t bend while it’s freezing.
Make sure to wrap well in foil and seal closed.
Pop a label on top so you don’t forget what’s inside and what date you made it and then place in the freezer.
How to Cook Frozen Homemade Lasagna
Start by defrosting in the refrigerator overnight. If you have the lasagna in a foil packet (instead of a disposable pan), transfer the lasagna to a 9” x 13” pan and cover with foil before defrosting. If you used a disposable pan, just stick the entire thing in the refrigerator.
Bake as instructed in the original recipe. If it’s still frozen, you may need to cook a few extra minutes, so just be sure to keep an eye on it so you don’t burn anything!
