Ingredients
3ouncesstrawberry jello
1cupboiling water
1cupice-cold water
16ouncesCool Whip
1½cupsstrawberry preserves(we used Smucker's strawberry preserves)
Extra whipped cream,for garnish
Fresh strawberries,for garnish
Instructions
In a medium bowl, combine the strawberry jello and the boiling water. Whisk until the jello is completely dissolved.
Add the ice water and mix until all of the ice is melted, and the mixture has cooled down to room temperature.
Whisk in the Cool Whip until there are no streaks and everything is well combined. Set aside.
In 6 (8-ounce) serving glasses, place ¼ cup of strawberry preserves in the bottom. Top the strawberry preserves with the strawberry mousse mixture. Refrigerate for at least 2 hours but preferably overnight to ensure the mousse has set fully.
Just before serving, top the mousse with additional whipped cream and garnish with fresh strawberries.
Notes
This is a great recipe to make ahead of time since it is already individually portioned. Make the mousse up to three days ahead of time and grab a dish for a quick and easy snack.
You could also make this strawberry mousse in small ½-pint mason jars with lids so you can take your dessert on the go.
Make sure to give your mousse enough time to set so that you have the perfect, fluffy texture.
