4cupsroot beer,your favorite brand - I used A&W
3cupsvanilla ice cream
Instructions
Open the can of root beer and pour it into a measuring cup. Let the root beer chill, uncovered, in the refrigerator for 2 hours. This is to allow the root beer to go “flat”. You want as few bubbles as possible.
Just before you are ready to make the popsicles, measure out the ice cream into a medium size mixing bowl. Allow the ice cream to sit at room temperature for about 5 to 8 minutes.
Whisk in the flat root beer until smooth.
Divide the root beer mixture evenly between the popsicle molds. Add the popsicle sticks and freeze for at least 4 hours, or until the popsicles are frozen through. Quickly run the popsicle molds under hot water to release the popsicles. Keep frozen until ready to serve.
Notes
If you do not have popsicle molds, you can use ice trays and toothpicks for this fun recipe.
Be sure to let this delicious treat freeze for at least 4 hours and up to overnight to make sure it is properly set.
If you can’t get your popsicle sticks to stand up right away, wait and pop them in once the popsicles have been in the freezer for 1 to 2 hours.
