From the first time you taste one of these Ritz churro bites, you will find it hard to resist the buttery sweet cinnamon sugar coating and perfect crunchy texture.
Preheat the oven to 350°F. Line a baking sheet with 2 layers of heavy-duty aluminum foil.
Spread the Ritz bits crackers in a single layer on the prepared baking sheet. Set it aside.
Add the butter, light brown sugar, vanilla extract, and ½ teaspoon cinnamon to a 2 to 3-quart heavy-bottomed saucepan over medium-high heat. Bring to a low boil for 1 to 1½ minutes. Be sure to stir frequently.
Remove the saucepan from the heat. Carefully spoon the butter mixture over the layer of Ritz bits crackers. Use tongs or a silicone spatula to “toss” the crackers until well coated. Bake for 10 minutes.
Add the granulated sugar and ground cinnamon to a small mixing bowl. Stir to combine. Set it aside.
Remove the cracker from the oven. Sprinkle the cinnamon and sugar over the crackers. Allow to cool completely. Once cooled, “break” the churro bites apart. Serve once completely cooled.
Notes
You can make the recipe in the air fryer. Bake at 350°F for 7 minutes.
Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to keep a close eye on your crackers as the suggested baking time approaches.
