  • 3/4 Cups Coconut Flour plus a little if batter if too thin
  • 2 Cups Smooth Natural Peanut Butter
  • ½ Cup Peanuts smashed
  • 1 Cup Dark Chocolate Melting Wafers
  • ½ Tbsp Coconut Oil
  • 1 Package Truvia Sweetener divided


  • Line a 9x13 baking sheet with parchment paper and set aside.
  • Combine coconut flour, natural peanut butter, and smashed peanuts, and ¾ package Truvia in a medium bowl. The batter should be sticky, but not thin. If the batter is too thin then add ¼ additional cup of coconut flour.
  • Place the peanut butter mixture in the refrigerator for 30 minutes.
  • In a small bowl, combine dark chocolate, coconut oil, and a ¼ packet of Truvia Sweetener. Place in microwave for 30 seconds. Stir, and return to microwave for an additional 30 seconds. Stir well.
  • Take peanut butter mixture out of the refrigerator and roll into bite-size balls. Using a spoon, dip each ball in chocolate and then place on the parchment paper.
  • Refrigerate balls until ready to eat.
