Ingredients
8ouncescream cheese, softened
1¼cupspowdered sugar
8ounceswhipped topping,thawed
3ouncespeach-flavored gelatin
30.5ouncescanned sliced peaches, drained and diced (or 5 to 6 fresh peeled, pitted, and diced)
2½cupsmini marshmallows
½cupfinely chopped pecans
Instructions
Using a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat together the softened cream cheese and powdered sugar for 1½ to 2 minutes, until smooth.
Whisk in the thawed whipped topping and peach-flavored gelatin.
Fold in the drained and diced peaches and mini marshmallows. Tightly cover and chill in the refrigerator for 2 hours.
Just before serving, fold in the chopped pecans. Serve chilled.
Notes
If you are using fresh peaches, toss the peaches in 1 tablespoon of lemon juice beforehand.
Make sure the cream cheese is at room temperature so that you don’t have lumps in the creamy dressing.
Stir all the ingredients together carefully as you don’t want to break apart the fruit pieces.
For best results, make sure you give your salad at least 1 hour of chilling time. It allows all of the yummy flavors to blend together.
