321ouncesregular-cut frozen french fries
1½teaspoonskosher salt
1teaspoononion powder
1teaspoonfresh cracked black pepper
½teaspoonsmoked paprika
16ouncessmoked bacon,cooked and crumbled
4cupsColby and Monterey jack cheese,freshly shredded
1cupquartered grape tomatoes
3tablespoonschopped fresh chives

Instructions
Preheat the oven to 400°F. Line a baking sheet with heavy-duty aluminum foil. Generously spray the lined baking sheet with nonstick cooking spray.
Evenly spread the frozen fries in a single layer. Lightly spray the frozen fries with nonstick cooking spray. Sprinkle the frozen fries with kosher salt, onion powder, cracked black pepper, and paprika. Bake for 20 minutes.
Remove the baking sheet from the oven. Move the top oven rack to the second highest level. Increase the oven temperature to 425°F.
Sprinkle ¾ of the cooked and crumbled bacon over the fries. Evenly sprinkle the shredded cheese over the layer of bacon. Sprinkle the remaining crumbled bacon. Bake for an additional 5 minutes until the cheese is melted. Remove the fries from the oven. Sprinkle the quartered grape tomatoes and chopped chives over the cheese and bacon. Garnish with sour cream if desired. Serve while hot.
Notes
It is best to grate your own cheese, as the pre-shredded cheese doesn’t melt quite as well due to being coated with a preservative.
