This light and airy strawberry jello salad will certainly be a family favorite. Creamy whipped cream and cottage cheese are combined with fruit and jello for a sweet treat.

Ingredients
8ouncesCool Whip,thawed
3ouncesstrawberry jello powder
1cupcottage cheese,low-fat small curd
1cupcrushed pineapple,drained
1cupfresh strawberries,capped and thinly sliced (optional garnish)
1strawberry,thinly sliced (optional garnish)
Instructions
Using a medium-sized mixing bowl, whisk together the thawed Cool Whip and the jello powder until the jello powder begins dissolving and the mixture is smooth.
Fold in the cottage cheese, drained crushed pineapples and the sliced strawberries.
Garnish with thinly sliced strawberries. Serve immediately, or cover and keep refrigerated until you are ready to serve.
Notes
The low-fat small curd cottage cheese has very little excess liquid. If you choose to use a large curd cottage cheese, you may need to drain it before adding to the jello mixture.
Stir all of the ingredients together carefully as you don’t want to break apart the fruit pieces.
If you have the time, allow this salad to chill for at least a couple of hours in the fridge. This will allow the flavors to mingle together in your salad.
