Ingredients
8ouncescream cheese,softened (226g)
1 ½cupssour cream
1ouncedry ranch dressing mix,we used Hidden Valley Ranch brand (28g)
½teaspoonfresh cracked black pepper
2cupsfreshly shredded mild cheddar cheese,divide 1 ½ cups for body of dip and ½ cup for garnish
¾cupcooked and crumbled bacon,divide ½ cup for body of dip and ¼ cup for garnish (we used the Great Value brand)
½cupthinly sliced green onions,divide ¼ cup for body of dip and ¼ cup for garnish
Instructions
Add the softened cream cheese to a medium-sized (2-3 quarts) mixing bowl. Use a handheld mixer on medium-low speed to mix the cream cheese for 1 - 1 ½ minutes until smooth.
Add the sour cream, dry ranch dressing mix, and cracked black pepper. Continue to mix with the handheld mixer on medium speed just until well incorporated.
Lower the mixer speed to low and add in the 1 ½ cups freshly shredded mild cheddar cheese, ½ cup crumbled bacon, and ¼ cup thinly sliced green onions. Mix just until combined.
Cover tightly with plastic wrap, or transfer to an airtight container with a lid and chill in the refrigerator for 1 hour.
When you are ready to serve, sprinkle the top of the dip with the remaining shredded cheddar cheese, crumbled bacon, and thinly sliced green onions. Serve with crackers or fresh vegetables.

Notes
It's critical that your cream cheese is at room temperature before mixing. Leave it on the counter for about 30 minutes before beginning to make your dip. If you're in a hurry, cut it into small pieces. It will soften faster that way.
Make sure to cook and crumble the bacon ahead of time.
Freshly shredded cheese always tastes better than pre-shredded.
If you find your finished dip is too thick to scoop, add a bit more sour cream and combine again. Add a tablespoon or two at a time until you've reached your desired consistency.
If your dip isn't well combined with the mixer, there's a chance a bit of water could develop on the top of the dip while it's in the fridge, or the dip could separate. If this happens, you can mix again, or just simply pour off the water.
Always add the ingredients of this dip gradually and combine well before each addition. This will help the ingredients incorporate better.
