Ingredients
⅔cupheavy cream
2tablespoonsheavy cream
1tablespoonfresh orange zest,plus more for optional garnish
1½teaspoonspure orange extract
12ouncesdark chocolate chips
½cupgranulated sugar,for rolling the truffles in
Instructions
Add the heavy cream to a medium-sized microwave-safe bowl.
Heat the cream for 1 minute in the microwave.
Whisk in the orange zest and orange extract.
Add the dark chocolate chips to the cream mixture, and stir until the chocolate is completely melted and incorporated. You can return the bowl to the microwave and heat it in 15-second intervals if the mixture is not warm enough to completely melt the chocolate.
Once the chocolate mixture is smooth, cover the bowl and chill in the refrigerator for 30 to 35 minutes. This will chill the chocolate enough to be molded.
Use a 1-tablespoon cookie scoop or a tablespoon to scoop out the chocolate.
Roll the chocolate in the granulated sugar to coat completely.
Place the truffles on a lined baking sheet. Chill in the refrigerator until you are ready to serve.
Notes
You can also heat the heavy cream on the stovetop in a small saucepan rather than in the microwave.
If the truffle mixture is too warm, it will not form into balls properly. Make sure you don’t skimp on the time in the fridge for this step.
Using a small cookie scoop would give you uniform balls and the size you want for these truffles.
