1headcauliflower
1tablespoonolive oil
½cupheavy cream
½tablespoonpaprika
½tablespoonmustard powder
4ouncescheddar cheese,freshly shredded
4ouncesColby jack cheese,freshly shredded
2ouncescream cheese,room temperature

Instructions
Preheat oven to 450°F. Line a baking sheet with parchment paper
Chop the cauliflower into bite-size pieces and toss with olive oil to evenly coat. Add salt and pepper to taste.
Place the cauliflower pieces on the baking sheet and roast for 20 minutes or until tender.
In a medium saucepan, over medium heat, whisk together the heavy cream, paprika, mustard powder, and three types of cheese.
Continue cooking, stirring frequently, until the cheese is melted and smooth.
Add the roasted cauliflower and stir so that the cauliflower is evenly coated in cheese sauce.
Top with freshly cracked black pepper and freshly chopped parsley.
Serve warm.
