Ingredients
1chicken breast,cut into bite-size pieces
1tablespoondry ranch dressing, used to flavor the chicken
4naan bread
¼cupvegetable/canola oil
½cupbottled ranch dressing
4 to 6stripsbacon,cut into bite-size pieces and cooked
1tablespoonminced garlic
2tablespoonsminced red onion
½cupfresh spinach, cut into thin strips (optional)
1 to 2cupsItalian cheese blend
Instructions
Prepare your chicken either at home or while camping by placing the bite-size pieces into a skillet and sprinkling the dry ranch dressing over the chicken. Cook the chicken until browned and cooked completely through. If you prepared it at home, just place the chicken in a plastic Ziploc or storage container to take with you camping.
Prepare your fire with either wood or charcoal. Let it burn down until ash gray with moderate heat but no big flames. Prepare the grate to go over the fire by spraying it (away from the fire) with nonstick spray.
Brush oil on one side of the naan bread and place it, oil side down, onto the grate over the fire. Watch carefully until it is golden brown. Remove from the fire.
Take the grilled naan bread off the grate and brush oil on the non-grilled side. Turn the naan bread over with the oil side down and begin to make your pizza on the grilled side.
Spread bottled ranch dressing onto your naan bread. Next, add the cooked chicken, bacon, chopped garlic, red onion, and spinach in the amounts you desire all over the piece of naan. Top the pizza off with cheese.
Place the pizza directly onto the grate over the fire. Watch carefully until it is heated through and the cheese is melting. If your cheese is slow to melt, you can make a “tent” out of a piece of foil and place over the top of the pizza to help the cheese melt more.
When the pizza is done to your liking, use a big spatula to remove the pizza to a cutting surface and use your pizza cutter to cut into the desired number of pieces. Enjoy!
Notes
What is fantastic about these campfire pizzas is that they can be easily prepped ahead at home before you leave for camping — or at your campsite. Whatever works best for you.
If your cheese is slow to melt you can make a “tent” out of a piece of aluminum foil and place over the top of the pizza to help the cheese melt more.
The foil side that touches the grate will most likely be a little oily from the nonstick spray or dirty with ash when you remove it, so be careful. Remember anything cooked over the open fire will be hot when removing, grill with care!
