Ingredients
¾cupunsalted butter,melted and cooled
2cupslight brown sugar
2largeeggs,room temperature
1½teaspoonsvanilla extract
2cupsall-purpose flour
1teaspoonbaking powder
½teaspoonsalt
½cuppecans,finely chopped
½cupbutterscotch chips
Instructions
Preheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper. Be sure to allow some of the parchment paper to overhang the sides of the pan to allow for easy removal once baked and cooled.
In a large mixing bowl, add the melted unsalted butter and light brown sugar. Stir, using a large whisk or rubber spatula, until well combined.
Add the eggs, one at a time, followed by the vanilla extract. Be sure that each egg is fully incorporated before adding the next ingredient.
In a separate bowl, combine together the all-purpose flour, baking powder and salt.
Add the half the flour mixture to the bowl of wet ingredients, stir until the flour has been fully incorporated, followed by the second half of the flour mixture and stir again until your butterscotch brownie batter is thick and smooth.
Fold the finely chopped pecans and the butterscotch chips into the batter, being sure to scrape down the sides and bottom of the bowl to ensure the batter is evenly combined.
Spread the batter into an even layer in the prepared baking pan and bake the butterscotch brownies for 25 to 30 minutes. Be sure to check for doneness at the 25 minute mark. The top of the brownies should be golden and shiny with a slightly cracked look. A toothpick inserted into the center should come out with a few moist crumbs.
Allow these butterscotch brownies to cool completely on the counter before removing them from the pan and cutting into individual servings.
Notes
Because these are such simple and easy brownies, you will want to ensure that you use high-quality ingredients for the best flavor and results.
I prefer to bake these brownies in a straight-sided, good-quality, aluminum baking pan for best results. This will ensure that your butterscotch brownies are evenly baked and can be sliced into evenly sized squares.
Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to keep a close eye on your brownies as the suggested baking time approaches.
