Ingredients
4ouncescream cheese,softened to room temperature
3.4ouncesinstant banana pudding
1cupwhole milk
½teaspoonbanana extract
8ounceswhipped topping,thawed
2cupsmini vanilla wafer cookies
2cupsmini marshmallows
1cupsliced bananas,approximately 2 small bananas, ¼ inch thick
Instructions
In a large bowl, beat the softened cream cheese with a handheld mixer on medium speed for about 1 minute, or until smooth.
In a separate small bowl, whisk together the instant banana pudding mix, whole milk, and banana extract until just combined and slightly thickened.
Add the pudding mixture to the cream cheese and beat on medium speed for 1 to 2 minutes, until smooth and thick.
Fold in the thawed whipped topping until fully incorporated.
Gently stir in the mini vanilla wafer cookies and mini marshmallows until evenly distributed.
Carefully fold in the sliced bananas, reserving a few slices if you would like to use them for garnish.
Spoon the mixture into a serving bowl, top with reserved banana slices and extra mini wafers, cover with plastic wrap, and refrigerate for 30 minutes.
Notes
Mini vanilla wafers make this recipe quick to assemble. If using regular-sized wafers, crush them slightly before adding so you don’t end up with large cookie pieces.
To help slow browning, lightly brush or dip the banana slices in lemon juice, keeping in mind this may add a slight tart flavor.
If your bananas yield more than 1 cup of slices, you can add the extra to the mixture or freeze them in a zip-top bag for smoothies or other recipes later.
