Ingredients
2cupsmilk chocolate chips
½cupsweetened condensed milk
½cupBaileys Irish cream
1teaspoonvanilla extract
Instructions
Line a loaf pan with parchment paper and set aside.
Place the chocolate chips and sweetened condensed milk in a microwave-safe bowl.
Heat mixture, 30 seconds at a time, stirring between each interval. Heat for a total of 1 to 1½ minutes.
Stir until the chocolate is completely melted though the mixture is thick; then stir in the Irish cream and vanilla extract. Initially, the mixture will be thick and lumpy, but as the Baileys incorporates, it will make a smooth pourable mixture.
Spread fudge into the prepared loaf pan and chill in the refrigerator for 2 hours.
Lift from the pan by the parchment paper and cut into pieces.
Notes
The alcohol content in the Baileys Irish cream fudge is not cooked off, so this is an adult treat!
Line the pan with enough parchment paper so that it overhangs the sides of the pan. This will give you a sling that will make lifting the fudge out of the pan easier.
To help cut the fudge after chilling, score a grid on the top of the fudge when it is barely set but still warm.
