Ingredients
1½cupspanko breadcrumbs
½cupgrated parmesan cheese
2teaspoonsonion powder
1teaspoonItalian seasoning
½teaspoonkosher salt
½teaspoonblack pepper,fresh cracked
2mediumzucchini,each zucchini weighed 7 ounces
1largeegg
4tablespoonshalf and half
Instructions
Add the panko breadcrumbs, parmesan cheese, onion powder, Italian seasoning, kosher salt, and pepper to a medium-sized bowl. Stir to combine. Set it aside.
Slice the end of the zucchini off and discard. Slice the zucchini into ⅛-inch round slices. (If you prefer a thicker slice, remember to adjust the cooking time accordingly)
Add the egg and half and half to a small bowl. Whisk to incorporate completely.
Line a baking sheet with parchment paper.
Dip the sliced zucchini into the egg mixture, then dip it into the breadcrumb mixture. Lay the breaded slices onto the prepared baking sheet. Repeat for the remaining slices.
Remove the air fryer basket and spray with non-stick cooking spray.
Preheat the air fryer to 400°F for 3 minutes.
Lay the breaded zucchini slices in a single layer in the air fryer basket. Generously spray the breaded zucchini slices with non-stick cooking spray. Cook for 9 to 10 minutes. If you sliced your zucchini thicker, add extra time. (I cooked my zucchini in 4 batches) Serve while hot.
