Chicken and Stuffing Casserole
This easy chicken and stuffing casserole is a favorite weeknight dinner for our family. Simple and quick to make, it boasts hearty comfort food flavor with tender pieces of chicken, a creamy sauce, and savory stuffing baked together before being topped with crispy bacon.
- 3 cups of rotisserie chicken pulled apart
- 1-10.5 oz. can cream of mushroom soup
- 1-10.5 oz. can cream of chicken soup
- 1-10.5 oz. can cream of celery
- 11/2 cups of milk
- 2 tablespoons olive oil
- 1 cup yellow onion chopped
- 1 tablespoon garlic minced
- 1 cup celery chopped
- 2 cups chicken broth
- 12 ounces dry stuffing
- crumbled bacon optional for garnish
Preheat oven to 350 degrees.
In a bowl mix together chicken, soups and milk.
Spread the chicken/soup mixture on the bottom of 9 x 13 baking dish.
Sauté onion, garlic and celery in 2 tablespoons of olive oil in a pot (tall enough to add the stuffing).
After the onions, garlic and celery are tender, remove from heat and pour in the chicken broth then add the stuffing, salt and pepper to taste and mix well.
Crumble stuffing on top of soup mixture till evenly spread in the entire baking dish.
Crumble bacon on top.
Bake for about 30 min or until browned and bubbly.
