Grandma's Banana Bread

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup butter soft
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3-4 bananas about 1 1/4 cups mashed

Instructions

  • Preheat oven to 325, grease and flour OR line with parchment paper loaf pan.
  • Combine flour, baking soda, salt, cinnamon - whisk.
  • Combine butter and sugars until fluffy, then add eggs and vanilla, then stir in mashed bananas.
  • Add dry ingredients to wet and mix until just combined.
  • Pour into loaf pan and bake for 1 hour and 25 minutes until toothpick comes out clean.leave in pan few minutes, then cool completely on a rack.

Notes

Pro Tip: Make sure bananas are overripe, as opposed to yellow. 
  • To get more height with your slices, use an  8 1/2 x 4 1/2 inch loaf pan.
