Ingredients

  • ½ cup butter softened
  • ½ cup packed dark brown sugar
  • 1 cup unsulphured molasses
  • 1 egg
  • 1 teaspoon vanilla
  • 2 ½ cups flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¾ teaspoon nutmeg
  • ¾ teaspoon cloves
  • ½ teaspoon salt
  • 1 cup boiling water

Instructions

  • Prepare a 9x9 pan by generously greasing and flouring or line with parchment paper. Preheat oven to 350 degrees.
  • In a large bowl cream together the butter and brown sugar.
  • Add molasses and mix until combined.
  • Add the egg and vanilla. Mix well.
  • In a separate medium-size bowl whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  • Gradually add the dry ingredients to the wet molasses mixture. Stir until combined.
  • Carefully stir in the boiling water until smooth.
  • Pour into prepared pan.
  • Bake for 40 minutes.
