- ½ cup butter softened
- ½ cup packed dark brown sugar
- 1 cup unsulphured molasses
- 1 egg
- 1 teaspoon vanilla
- 2 ½ cups flour
- 1 ½ teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- ¾ teaspoon nutmeg
- ¾ teaspoon cloves
- ½ teaspoon salt
- 1 cup boiling water
Prepare a 9x9 pan by generously greasing and flouring or line with parchment paper. Preheat oven to 350 degrees.
In a large bowl cream together the butter and brown sugar.
Add molasses and mix until combined.
Add the egg and vanilla. Mix well.
In a separate medium-size bowl whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the wet molasses mixture. Stir until combined.
Carefully stir in the boiling water until smooth.
Pour into prepared pan.
Bake for 40 minutes.
