Ingredients
8slicesItalian sandwich bread
6tablespoonssalted sweet cream butter,melted
1tablespoonextra virgin olive oil
1teaspoondried Italian seasoning
1teaspoononion powder
48slicesof full-size pepperoni,12 slices per sandwich
2cupsfreshly grated mozzarella cheese,½ cup per sandwich
8slicessmoked provolone cheese
8tablespoonspizza sauce
Instructions
Add the melted butter, extra virgin olive oil, Italian seasoning, and onion powder to a small mixing bowl. Whisk, or stir, to combine.
Heat a 10 to 12-inch nonstick skillet over medium heat.
Generously brush one side of 2 pieces of bread with the butter mixture.
Place the two pieces of bread in the skillet, butter side down.
Carefully spoon and spread 2 tablespoons of the pizza sauce over the bread slices in the skillet.
Lay 1 slice of the provolone on top of the sauce layer.
Sprinkle ¼ cup of the shredded mozzarella over the provolone layer.
Lay the 12 slices of pepperoni over each of the two sandwiches.
Sprinkle ¼ cup more of the shredded mozzarella over the pepperoni layer.
Lay 1 slice of provolone on top of the top mozzarella layer.
Place the top slices of bread on top of the top provolone layer.
Generously brush the top slices of bread with the butter mixture.
Cook each sandwich for 3 to 4 minutes per side. Be sure to keep a close eye on each sandwich as it cooks. Carefully slice each sandwich in half and serve while hot.
Notes
The best way to get your cheese to melt is to let it sit out at room temperature for 15 to 20 minutes before you start making these.
This would also be fantastic grilled in a panini press instead of on the stovetop.
Keep a close eye on the temperature, and adjust up or down to avoid burning the sandwich.
