Instructions
In a large mixing bowl, combine the pineapple and pudding mix, stirring until the pudding is fully dissolved and the mixture thickens.
Mix in the coconut and whipped topping until evenly incorporated.
Spoon the mixture into a serving dish and finish with chopped pistachios and cherries on top.
Notes
You can use the pineapple juice to help dissolve the pudding mix.
Stir the ingredients gently so the pineapple pieces hold their shape.
If you have the time, let the pistachio fruit salad chill in the refrigerator for a few hours so the flavors can come together.
