Add the undrained crushed pineapple to a medium mixing bowl (2 to 3 quarts), then sprinkle the instant pudding mix over the top and stir until fully combined.
Stir in the miniature marshmallows, shredded coconut, and ½ cup of the chopped pecans, setting aside the remaining pecans for garnish.
Gently fold the thawed whipped topping into the mixture until it is smooth and evenly blended.
Cover and refrigerate the pineapple fluff for 2 hours before serving so the flavors can come together, keeping it chilled until ready to serve, then sprinkle the reserved pecans on top just before serving and add a cherry if you’d like.
