Instructions
Using a medium-sized mixing bowl and a wooden spoon, stir the crushed pineapple together with the instant vanilla pudding mix until fully blended.
Gently fold in the whipped topping along with the rum extract until combined.
Add the mini marshmallows, coconut flakes, and chopped walnuts, folding them in carefully.
Cover the bowl tightly and refrigerate for at least 1 hour or up to overnight before serving.
Notes
If you’re sensitive to texture, you can leave out the coconut flakes without affecting the overall flavor.
Do not drain the pineapple, as the juice is needed to properly set and flavor the mixture.
For best results, allow the pina colada fluff salad enough time to chill so the flavors can fully come together.
