Ingredients
16ouncesrotini pasta
1cupcherry tomatoes,halved
½zucchini,diced
½cupred onion,diced
½green bell pepper
½cupblack olives,sliced
⅓cupparmesan cheese,shredded
1cupmozzarella cheese,cubed
7.5ouncessalami
2tablespoonsfresh parsley,chopped
1cupItalian vinaigrette dressing
1lemon,juiced
Instructions
Cook the rotini pasta according to the package directions until al dente and still slightly firm. Drain and rinse with cold water.
Add all ingredients to a large bowl and stir gently to combine.
For best flavor, refrigerate for 4 hours before serving.
Notes
This is a great make-ahead dish for potlucks. Keep it in the fridge for up to 5 days!
