3ouncesorange Jello mix
1cupboiling water
½cupcold water
3.4ouncesvanilla instant pudding
8ouncesCool Whipthawed
15ouncesmandarin orangesdrained well
2cupsmini marshmallows
Instructions
In a large mixing bowl, whisk together the orange gelatin and boiling water until fully dissolved, then stir in the cold water, scraping down the sides with a rubber spatula; cover with plastic wrap and refrigerate for 15 to 20 minutes.
Remove from the refrigerator and whisk in the instant vanilla pudding mix until smooth, scraping the sides again to ensure everything is incorporated; cover and return to the refrigerator for another 15 to 20 minutes.
Take the bowl out of the refrigerator and gently fold in the mandarin oranges, whipped topping, and marshmallows; cover and refrigerate for at least 1 hour, or until ready to serve.
Notes
Be sure to drain the mandarin oranges well before adding them to the mixture.
Fold the ingredients together gently to keep the orange segments intact. Allow the salad to chill for at least 1 hour so the flavors can fully come together.
