4ouncescream cheese,softened to room temperature
1cupsour cream
¾cupricotta cheese
10.5ouncescream of chicken with herbs1 can
½teaspoononion powder
¼teaspoonblack pepper
¾teaspoongarlic salt
4cupsshredded white meat chicken,2 pounds
1cupshredded mozzarella cheesefreshly shredded is best
1½cupsRitz cracker crumbs,from 1 sleeve of 32 crackers
⅓cupunsalted butter,melted
1tablespoonfresh parsley,chopped
Instructions
Preheat the oven to 350°F. Coat a 9×13 casserole dish with cooking spray and set it aside.
Place the softened cream cheese in a large mixing bowl. Using a wooden spoon or rubber spatula, stir it until smooth and loosened so it blends easily with the other ingredients.
Add the sour cream, ricotta cheese, cream of chicken and herb soup, garlic salt, onion powder, and black pepper to the cream cheese. Stir until the mixture is fully combined and smooth.
Add the shredded white meat chicken and gently fold it in until the chicken is evenly coated with the creamy mixture.
Transfer the chicken mixture to the prepared baking dish and spread it into an even layer.
Sprinkle the shredded mozzarella cheese evenly over the top.
In a small bowl, combine the Ritz cracker crumbs with the melted unsalted butter and stir until coated. Sprinkle the crumb mixture evenly over the casserole.
Bake for 30 to 35 minutes, or until the casserole is hot and bubbly and the topping is golden brown.
Garnish with chopped fresh parsley.
Let the casserole rest for 5 to 10 minutes before serving.
Notes
You can assemble the casserole up to 6 to 8 hours ahead of time without adding the Ritz cracker topping. Cover it tightly with plastic wrap and refrigerate until ready to bake. Before baking, let it sit at room temperature while you prepare the topping (step 7) and preheat the oven.
If you’re crushing the Ritz crackers, use a rolling pin directly on the package or place them in a Ziploc bag for easy crushing.
Oven temperatures can vary and may need occasional recalibration. Check the casserole near the beginning of the recommended bake time to avoid overcooking.
