10mini croissants
⅓cupsalted butter,melted and cooled
2tablespoonsDijon mustard
1tablespoonhoney
½teaspoononion powder
½teaspoonkosher salt
¼teaspoonfresh cracked black pepper
5thin slicesblack forest ham,sliced in half
10slicesSwiss cheese,sliced in half
1largeegg white,room temperature
1tablespoonwater

Instructions
Preheat the oven to 350°F. Lightly spray a 9x13 baking dish with nonstick cooking spray.
Slice the croissants horizontally.
In a small bowl stir together the melted butter, Dijon mustard, honey, onion powder, kosher salt and cracked pepper until well incorporated.
Spoon, or brush the butter mixture over the inside top and bottom of the sliced croissants.
Lay 1 slice of swiss cheese on the bottom of each croissant.
Lay 2 halved slices of ham on top of the swiss cheese, or 1 halved piece for each mini croissant.
Top each slice of ham with the remaining swiss cheese. Place the top half of each croissant on the sandwiches.
Add the egg white and water to a small bowl. Use a fork to beat the egg white and water until large bubbles form and are well combined.
Brush the tops of each croissant with the egg white mixture and lightly sprinkle the poppy seeds on each croissant.
Bake for about 12 to 15 minutes, or until the cheese is melted and bubbling. If the tops of the croissants brown too quickly, loosely cover the dish with foil during the last few minutes of baking. Allow the croissants to rest for 5 minutes before serving.
Notes
If the croissants start to brown too fast, loosely cover them with foil for the last few minutes of baking to keep them from burning.
