Ingredients
3cupsall-purpose flour
1teaspoonbaking soda
2teaspoonsground ginger
1½teaspoonspumpkin pie spice
1cupsalted sweet cream butter,softened
¾cuplight brown sugar,packed
½cupunsulphured molasses
2tablespoonsunsulphured molasses
1largeegg,room temperature
1½teaspoonsvanilla extract

Instructions
Using a medium-sized mixing bowl, whisk together the flour, baking soda, ground ginger, and pumpkin pie spice. Set it aside.
Using a stand mixer, or a medium-sized mixing bowl and a handheld mixer, on medium-high speed, beat the softened butter for 30 seconds.
Add the light brown sugar, molasses, egg and vanilla and beat just until the ingredients are incorporated.
Add in the flour mixture, and beat on low until the flour is well combined.
Cover the dough and chill in the refrigerator for 30 minutes.
Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
Remove the cookie dough from the refrigerator. Divide the dough in half to make handling the dough manageable.
Dust your work surface and your rolling pin with flour.
Roll the cookie dough to ⅛ to ¼ inch thickness.
Press down with the cookie cutter, and gently wiggle the cutter to help ensure a clean cut.
Place the cut cookie shapes 2 inches apart.
Bake for 8 minutes.
Remove from the oven and allow the cookies to rest on the baking sheet 5 minutes before transferring the cookies to a cooling rack. Allow the cookies to completely cool before decorating.
Notes
Any cookie cutter shape can be used, as well as any candies to decorate after the cookies have been baked. The classic is a gingerbread man cookie cutter, but different shapes will work too!
If you are freezing the unbaked cookies, if you have the extra baking sheets, this can make baking much easier.
