Ingredients
2 to 3Granny Smith applesabout 2 cups
1mediumonionsliced (about 1 cup)
1pork tenderloin
1teaspooncumin
1teaspooncinnamon
½teaspoongarlic powder
½teaspoonground mustard
¼cuphoney
Instructions
Slice apples and onions into ½-inch slices. Sprinkle the apples and onions along the bottom of a crockpot, reserving some of the apple slices.
Use a sharp knife to make slices across the top of the pork tenderloin about ¾-inches apart.
Settle the tenderloin into the bed of apples and onions. Place a piece of apple into each slice in the tenderloin.
Stir together the cumin, cinnamon, garlic powder, ground mustard, and honey to make a paste.
Spread the paste over the top of the tenderloin.
Cover and cook for 3 to 4 hours on high, or 7 to 8 hours on low.
Notes
If your apples have tough skins, consider peeling them before slicing them. The apples are going to break down almost to applesauce consistency during cooking.
Use an instant-read meat thermometer to check for doneness. Pork should be cooked to an internal temperature of 145°F.
