10.5ouncescream of chicken with herbs soup,I used Campbell’s brand
¾cupsour cream
½cuplow-sodium chicken broth

½teaspoongarlic powder

3cupsrotisserie chicken,diced into ¾ to 1-inch pieces
2cupscrushed Ritz crackers
6tablespoonsunsalted butter,melted
Instructions
Preheat the oven to 350°F. Place an 8×8-inch casserole dish on a rimmed baking tray and set aside.
In a large mixing bowl, stir together the cream of chicken with herb soup, sour cream, low-sodium chicken broth, season salt, garlic powder, and black pepper until smooth and fully combined.
Fold in the diced rotisserie chicken, being careful not to break up the pieces too much.
Transfer the chicken casserole filling to the prepared dish and smooth the top into an even layer.
In a medium bowl, stir together the crushed Ritz crackers and melted butter.
Evenly sprinkle the cracker crumbs over the entire surface of the casserole.
Bake for 25 to 30 minutes, until bubbly and golden brown.
Notes
Ritz cracker Fresh Stacks work well here, since the extra sleeves stay fresh after opening. Three of the shorter sleeves will give you about 2 cups of crumbs for this recipe.
You can prepare the filling up to 8 hours in advance. Store it in an airtight container in the refrigerator, then transfer to the baking dish, add the cracker topping, and bake when ready.
To crush the Ritz crackers quickly, place them in a large ziplock bag and use a rolling pin to break them into crumbs.
Oven temperatures can vary and may need to be recalibrated from time to time for accuracy. Check your casserole at the lower end of the recommended baking time.
